What are seed oils and why are they different?
Fats are not all the same. The key structural difference is how many carbon-carbon double bonds they contain:
- Saturated fats (butter, coconut oil, beef tallow) — no double bonds. Chemically stable. Resistant to heat, light and oxidation. The main structural fat in human cell membranes.
- Monounsaturated fats (olive oil, avocado) — one double bond. Relatively stable. Much lower risk than polyunsaturated.
- Polyunsaturated fats / PUFAs (sunflower oil, rapeseed, soybean, corn, safflower) — two or more double bonds. Chemically unstable. Oxidise easily when exposed to heat, light, or oxygen. The dominant fat in seed oils and most ultra-processed food.
The instability of PUFAs is the root of the problem. When polyunsaturated fats oxidise — through cooking, digestion, or simply sitting in your tissues — they produce a cascade of reactive breakdown products: lipid peroxides, aldehydes, and free radicals that damage cells and interfere with normal metabolism. The more PUFAs in your diet, the more of this oxidative load your cells have to deal with.
How seed oils suppress thyroid function specifically
The connection to thyroid isn't just general "inflammation." There are specific, identified mechanisms:
1. PUFAs block thyroid hormone at the cell membrane. Thyroid hormone (T3) needs to enter cells to do its job. PUFAs, when incorporated into cell membranes, interfere with the receptor signalling that allows T3 to cross into the cell. - Restaurant and takeaway food — nearly all commercial kitchens use rapeseed or vegetable oil

- "Olive oil" sprays and spreads — often blended with rapeseed
- Meat alternatives (plant-based burgers, etc.) — typically high in seed oils
The label to scan for: sunflower oil, rapeseed oil, vegetable oil, corn oil, soybean oil, safflower oil, cottonseed oil, grapeseed oil. If any of those appear in the ingredients, the product is high PUFA.

PUFA-safe cooking fats
- Butter — the easiest daily swap. Stable, delicious, actively supports metabolic function. Use generously.
- Ghee (clarified butter) — higher smoke point than butter; ideal for high-heat cooking like stir-fries.
- Coconut oil — high in saturated medium-chain fatty acids. Stable at high heat. Mild antimicrobial properties.
- Beef tallow or lard — traditional cooking fats, predominantly saturated, excellent for roasting and frying.

Where to start — the practical beginner approach
Removing seed oils from your entire life at once is genuinely difficult because they are in so much food. A staged approach is more sustainable:
Week 1 — clean your kitchen. Throw out or finish and don't replace any seed oil cooking fat in your home. Replace with butter for everything. This immediately stops the highest-volume daily exposure (your own cooking) and costs almost nothing extra.
Week 2 — read ingredient labels. Go through the staples in your fridge and cupboards. Look for sunflower oil, rapeseed oil, vegetable oil, corn oil. Find or make PUFA-free versions of the things you use most (mayonnaise, salad dressing, pesto). Most supermarkets now stock olive-oil-based versions of these, or they're easy to make at home.
Ongoing — don't stress about eating out. Restaurant food is almost entirely cooked in seed oils and there's not much you can do about it. Focus on keeping your home environment clean; treat eating out as an exposure you're minimising, not eliminating. This is a long-term shift in your baseline, not a detox.
